Add a third category for deal status - Won/Lost and "Hold"
Many clients may be interested in a product or service, but not yet ready to buy. Since they do not have a defined purchase time frame, I would prefer to separate them from my active funnel but keep them categorized for contacting on an occasional basis.

I don't think this is a good idea. Won/Lost is a way of closing a deal, and it then disappears from your pipeline. 'On Hold' is not a closed deal, it's just postponed, so it should not disappear from you deals view.
What works for my 'On Hold' deals is adding a new stage 'on hold', which can be done from your settings screen. Just make sure these deals are in the end of your list.
